CORNMEAL MUFFINS 
1 egg
3/4 c. cornmeal
3 tbsp. melted Crisco
1 c. buttermilk
1/4 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt

Beat egg slightly and add buttermilk. Add soda, baking powder and salt. Gradually add cornmeal and then pour melted fat to this mixture. Heat muffin rings and fill 2/3 full. Cook at 450 degrees for approximately 15 minutes. Number of servings: 6 muffins.
