CORNMEAL PANCAKES | |
1 1/2 c. yellow cornmeal 1/4 c. flour 1 tsp. baking soda 1 tsp. sugar 1 tsp. salt 2 c. buttermilk 2 tbsp. cooking oil 1 slightly beaten egg yolk 1 stiffly beaten egg white Stir together: cornmeal, flour, baking sod, a sugar, and salt. Add buttermilk, cooking oil, and egg yolk. Blend well. Fold in beaten egg white. Let batter stand for 10 minutes. Prepare as you do for regular pancakes 16 (4 inch) pancakes. |
