CORNMEAL PANCAKES 
1 1/2 c. yellow cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. sugar
1 tsp. salt
2 c. buttermilk
2 tbsp. cooking oil
1 slightly beaten egg yolk
1 stiffly beaten egg white

Stir together: cornmeal, flour, baking sod, a sugar, and salt. Add buttermilk, cooking oil, and egg yolk. Blend well. Fold in beaten egg white. Let batter stand for 10 minutes. Prepare as you do for regular pancakes 16 (4 inch) pancakes.

This was awesome! Way better than regular pancakes. As someone with wheat intolerance & love to find thingd like this. The oat flour (made myself) & cornmeal gave it a wonderful flavor & texture. Only thing I will change next time is making it a bit thicker. BTW; I used regular milk & it worked fine. I can't wait to try it with buttermilk.
