CORNMEAL MUSH 
2 3/4 c. water
1 c. yellow or white cornmeal
1 c. cold water
1 tsp. sugar

Bring to boil 2 3/4 cup water. Combine 1 cup yellow or white cornmeal, 1 cup cold water, 1 teaspoon salt and 1 teaspoon sugar; gradually add to boiling water, stirring constantly.

Cook over low heat 10 to 15 minutes. Eat hot with butter and milk added, or pour into a loaf bread pan. Chill several hours or overnight, turn out; cut in 1/2 inch slices. Fry slowly in hot fat, turning once. Serve with butter and syrup honey or molasses. Serves 6.
