CORNMEAL BRAN MUFFINS 
1 1/4 c. all bran cereal
1 1/4 c. milk
3/4 c. whole wheat flour
1/2 c. white flour (all-purpose)
1/3 c. yellow cornmeal
1/2 c. brown sugar, packed
3 tsp. baking powder
1/2 tsp. salt
1 egg
1/3 c. cooking oil
1 tsp. extract

Combine bran cereal and milk and let set 5 minutes. Stir together dry ingredients in another bowl. Add egg and oil to cereal mixture. Mix well and add to dry ingredients. Spoon into muffin tins. Bake at 400 degrees for 20 minutes. Makes 1 dozen.
