CORNMEAL MUFFINS 
Into sifter place:

3/4 c. cornmeal
1/4 c. flour
1 tsp. sugar
3/4 tsp. salt
3 tsp. baking powder

When sifted, cut into mixture 2 tablespoons butter to about size of green pea. Then add 1 egg and 3/4 cup milk. Stir only enough to blend. Place in muffin pan (or medium-size skillet) already greased and piping hot. Bake at 425 degrees for 15 or 20 minutes or until brown.
