MINI CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
2 eggs
1 box vanilla wafers
2/3 c. sugar
1 tsp. vanilla
1/2-1 can pie filling

Add together in bowl the cream cheese, sugar, eggs and vanilla. Beat until thick and smooth. Put crushed water in petit four cups, fill 2/3 full of mixture, or use cupcake papers and leave wafer whole; put in cupcake pan. Bake at 350 degrees (petit fours 12 minutes) (cupcakes 15 minutes). Fill will be firm when done. Cool and top with pie filling; refrigerate.
