SPANISH RICE | |
6 slices bacon 1 med. onion, diced 1 sm. bell pepper, diced 2 cans tomatoes 1 tomato can long grain rice 1 tbsp. brown sugar 1 tbsp. Worcestershire sauce 1 tsp. salt 1 tsp. chili powder Fry bacon until crisp and set aside. Cook the onion and pepper in about 2 tablespoons of the bacon grease. Stir in the undrained tomatoes, rice, brown sugar, Worcestershire sauce, salt, and chili powder. Cover; simmer about 30 minutes or until rice is done. Top with the bacon that has been crumbled, and stir into the rice. |
