SQUASH CASSEROLE 
2 c. cooked yellow squash, drained
3/4 stick butter, melted
2 eggs, beaten
1 tsp. salt
1/2 tsp. black pepper
1 c. onions, chopped
1 c. shredded cheese
1 c. evaporated milk
2 c. saltine cracker crumbs

Mash squash. Add ingredients and mix well. Pour into greased baking dish. Cover with cracker crumbs. Bake at 350 degrees for 30-45 minutes.
