ITALIAN MEAT LOAF 
1 c. med. cracker crumbs
1 1/2 lbs. ground beef
6 oz. can tomato paste
2 eggs
1/2 c. chopped onion
1/4 c. chopped green peppers
1 (12 oz.) carton sm. curd cottage cheese
1 (3 oz.) can mushrooms
1 tbsp. parsley
1/4 tsp. oregano

In a large bowl combine 1/2 cup medium cracker crumbs, 1 1/2 pounds ground beef, 16 ounce can tomato paste, 2 eggs, 1/2 cup chopped onion, 1/4 cup finely chopped green peppers; mix well. Pat 1/2 mixture into 8 x 8 x 2 inch pan.

Combine 1/2 cup cracker crumbs, one 12 ounce carton cottage cheese, mushrooms, 1 tablespoon parsley and oregano. Spread mixture evenly over meat mixture in pan. Top with remaining meat mixture. Bake at 350 degrees for 1 hour. Let loaf stand 10 minutes before serving.
