PUMPKIN NUT CAKE 
2 c. sugar
2 sticks butter, softened
3 eggs
2 1/4 c. plain flour, sifted
1/4 tsp. salt
1/4 tsp. baking soda
1 c. pumpkin (can or fresh)
1 tsp. vanilla
1 1/2 c. nuts, chopped

If using fresh add 1 1/8 teaspoon pumpkin spice. If you don't have pumpkin spice use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger and 1/4 teaspoon nutmeg in place of pumpkin spice.

Blend sugar, butter, eggs, salt, soda, pumpkin and vanilla. Mix in nuts. Add flour. Put in Bundt pan. Bake at 350 degrees for 40-45 minutes.

If you don't like pumpkin you can use a cup sour cream for a great sour cream nut pound cake.
