PUMPKIN RAISIN NUT CAKE | |
2 c. sugar 4 eggs 2 tsp. cinnamon 1 (#2) can pumpkin or 2 c. fresh 1 c. nuts 1/4 c. self-rising flour 1 c. cooking oil 2 c. self-rising flour 1/2 tsp. nutmeg 3/4 c. seedless raisins 1/4 c. cooking oil Cream sugar and cooking oil until smooth. Add eggs, one at a time. Mix well after each addition. Sift flour and spices 3 times, add to creamed mixture and mix until smooth. Add pumpkin and mix thoroughly. Mix the raisins and nuts with 1/4 cup cooking oil, then add 1/4 cup flour. Using low speed, add mixture to batter. Pour into 2 (9") cake pans. Bake at 350 degrees for 30 to 35 minutes. Ice while cake is warm. |
