BRITTANY & CASSANDRA'S LEMON
COOKIES
 
2 c. butter, softened
1 c. sugar
2 c. flour
3 c. quick rolled oats
1 tbsp. grated lemon peel
1 tsp. lemon juice
Powdered sugar

In a medium bowl, cream butter and sugar. Add the flour, oats, lemon peel and lemon juice. Mix well, cover and chill for 1 hour.

Heat oven to 350 degrees. Shape dough into 1 inch balls and place on an ungreased cookie sheet. Flatten with the bottom of a glass dipped into the powdered sugar. Bake 12 to 15 minutes or until edges are light brown. Cool on a wire rack and sprinkle with powdered sugar.
