HOMEMADE SALSA 
12 tomatoes, quartered
3 lg. onions, diced
3 green bell peppers
8-12 jalapeno peppers
3 tbsp. sugar
1 tbsp. salt
1 c. vinegar

Cook slowly 3-6 hours. Remove tomato skins while cooking. Put in clean hot jars. Hot water bath for 30 minutes. For best results use garden grown ingredients to achieve the most flavor.

I just made this recipe and it is awesome. I cut back on the jalapeno's in my first batch to 6. It gave it a mild kick. I have so many tomatoes out of the garden that I'll be making salsa for the next few days. These will make great Christmas gifts to my family.

This recipe was simple so I tried it. I was concerned about only 1 cup of vinegar being the only liquid to cook this salsa, but the tomatoes produced their own juices and it cooked on low for 3 hours. I added garlic to mine. About a teaspoon of the minced garlie. It filled about 4 pint jars. The only thing you have to pay attention to is removing the peels as they come off of the tomatoes. Other than that, its a great recipe. You can add cumin or other spices to your liking if you like.

A very nice and smooth salsa i also added fresh garlic to mine.Also i peeled tomatoes b4 cutting them by dipping them for about 5 seconds into Boiling water.
