POTATOES ALMONDINE 
3 c. mashed potatoes, can use instant or reg.
1/3 c. cottage cheese
1/3 c. sour cream
2 eggs, well beaten
1 tbsp. minced onion
1/8 tsp. white pepper
1/3 c. toasted, slivered almonds
3/4 tsp. salt

Prepare 6 servings (3 cups) mashed potatoes. Add cottage cheese, sour cream, eggs, onion, pepper and salt. mix well. Spread mixture into greased 8x8x2 baking pan. Top with almonds. Bake in 375 degree oven 30 to 35 minutes until top is browned. Serves 6 to 8.
