CARIB STUFFED PEPPERS 
6 slices bacon, diced
1 lg. onion, chopped
12 slices day-old bread with crusts
1 c. or 1 (6 1/2 oz.) can crabmeat
3/4 c. diced process American cheese
1 egg, beaten
Salt and pepper
Dash of dried savory or thyme
6 lg. green peppers
Vegetable oil

Cook bacon until partially done. Add onion and cook until onion is golden. Soak bread in small amount of water and squeeze dry. Remove bacon and onion from fat and add to bread with crabmeat, cheese, egg and salt and pepper to taste. Add herb and mix well. Cut lids from the stem ends of peppers. Remove seeds and parboil peppers and lids 5 minutes in boiling water.

Stuff peppers lightly with the stuffing and put on lids. Brush with oil. Stand upright in baking dish. Put a little water in bottom. Bake in moderate 350 degree oven 45 to 50 minutes. Serves 6.
