FILLED COOKIES 
3/4 c. shortening
1 c. brown sugar
1 c. white sugar
3 eggs
1 1/2 tsp. vanilla
3/4 c. sour milk
1 tsp. baking soda
3 tsp. baking powder
1/2 tsp. salt
6 1/2 c. flour

FILLING:

1 c. applesauce
1/2 c. raisins
1/2 c. chopped dates
1/2 c. brown sugar
1/4 c. water
1 1/2 tsp. vanilla
2 tsp. butter

Cream together sugars and shortening. Add eggs and vanilla and beat. Add dry ingredients, alternating with milk. Chill 1-2 hours. Roll out on floured surface to about 1/4 inch thick. Cut out 2 1/2 inch rounds with cutter. Place on greased cookie sheet. Place 1 tablespoon filling on each. Top with another round, sealing edges well. Roll up scraps and reroll and cut. Bake at 400 degrees for 12-15 minutes. Remove from sheet and cool. Stores well.

FILLING: Put applesauce, raisins, dates in blender until smooth. Put mixture in small pan; add sugar and water. Bring to a boil for 1 minute, stirring. Remove from heat and add vanilla and butter. Chill until ready to use.
