FILLED COOKIES 
1/2 c. soft shortening
1 c. sugar
2 eggs
2 tbsp. cream
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. baking soda
1/2 tsp. salt

Mix shortening, sugar and eggs together. Stir in 2 tablespoons cream and 1 teaspoon vanilla. Sift together flour, soda and salt. Chill dough. Roll and cut three inch rounds or place a tablespoon and press flat. Place on lightly greased baking sheet. Place a rounded teaspoon of filling on each. (Use your favorite jelly. We liked fig or apple.) Fold over or add another tablespoon for top. Press together. Bake at 400 degrees 8 to 10 minutes. Makes 3 to 6 dozen depending on how large or small you want them.
