BAKED BLACK BEAN BURRITOS 
1 lb. ground beef
1 env. taco seasoning
water
1 (15 oz.) can black beans
1 (10 oz.) can Rotel tomatoes w/ chilies, drained
2 cups shredded Mexican "fiesta" style cheese, divided
6 medium tortillas
dash of garlic powder
dash of salt and pepper

Brown the ground beef, half way through add garlic and season with salt and pepper. Drain when done. Add taco seasoning packet and water as instructed on packet. Simmer.

In a mixing bowl add can of rinsed black beans, can of drained Rotel and 1 cup shredded cheese, mix.

Add about 1/3 cup ground beef and 1/3 cup black bean mix to tortilla, fold and place in baking pan. Top with remaining cup of cheese. Repeat for remaining tortillas.

Bake at 350°F for 15 to 20 minutes depending on your cheese topping preference. Let sit 5 minutes before serving.
