BAKED BLACK BEAN BURRITOS 
1 lb. ground beef
1 env. taco seasoning packet
1 (15 oz.) can black beans, drained and rinsed
1 (10 oz.) can Rotel tomatoes w/ chilies, drained
2 cups shredded Mexican "fiesta" style cheese, divided
6 medium tortillas
dash of garlic powder
dash of salt and pepper

Brown the ground beef, half way through season with garlic powder and salt & pepper. Drain when done. Add taco seasoning packet and water as instructed on packet. Simmer.

In a mixing bowl add can of rinsed black beans, can of Rotel drained and 1 cup of cheese, mix.

Add about 1/3 cup ground beef and 1/3 cup black bean mix in tortilla. Fold and place in baking pan. Top with remaining cup of cheese. Repeat for remaining tortillas.

Bake at 350°F for 15 to 20 minutes depending on your cheese topping preference. Let sit for 5 minutes.

Makes 6 burritos.
