UNCOOKED PEACH JAM 
3 c. pared fruit
5 c. sugar
1/8 tsp. grated lemon rind
1 tbsp. lemon juice
3/4 c. water
1 box powdered pectin

Wash, peel and pit fully ripened peaches; chop fine and measure into bowl. Add sugar, lemon rind and juice and mix well. Let stand 15 minutes stirring occasionally.

Mix water and pectin in small saucepan and bring to a boil. Boil hard for 1 minute stirring constantly.

Add to fruit mixture and stir for 3 minutes. Pour into small glasses and cover at once. Store in freezer.
