NO-COOK LOW SUGAR STRAWBERRY
FREEZER JAM
 
4 cups crushed strawberries (or other berries)
1 1/2 cups white sugar
1 env. "freezer jam" pectin (they come 2 in a box, only need one envelope per recipe)

Note: I crushed up the strawberries - to yield four cups. Crushed was equal to 4 pints of fresh strawberries.

I put them in my Kitchen Aid mixer on low to keep them moving. In a separate bowl, mix the sugar and freezer-jam pectin together, mix well. Slowly add to strawberries. Scrape bowl once and mix constantly for 3 minutes on medium speed. Scrape bowl down.

Pour into clean pint glass jars and seal with lid. Let stand on countertop for 30 minutes to thicken. Immediately place in refrigerator (if going to be used) or in freezer to store for up to one year.

Note: I have played with this recipe and also used canned peaches in place of the fruit. I drained all the juices off them, rinsed them in cold water, pureed them, then followed the rest of directions and made awesome Peach Jam!! I did the same with frozen blueberries (allowed to thaw before crushing) and it was great!! And its low sugar so its not soooooo sweet! Enjoy!
