PEACH JAM 
Approximate amount of fruit required - 4 cups processed fruit. Wash, peel and blend peaches in blender or food processor. Place in 4 quart kettle. Gradually stir 5 1/2 cups sugar into fruit and let stand 10 minutes.

In a separate small saucepan, mix 1 package of pectin with 3/4 cup water. Bring to a boil, stirring constantly and boil hard for 1 minute. Immediately stir pectin mixture into fruit and continue stirring for 3 minutes. Fill jars, cover and let sit at room temperature for 24 hours. Store jam in freezer. After thawing, jam will keep in refrigerator about 3 weeks. Yields about 6 1/2 cups.
