PERFECT CRUSTY BISCUITS
2 c. sifted flour
1/2 tsp. baking soda
1 tsp. salt
2 tsp. baking powder
2/3 c. buttermilk or sour milk
1/3 c. shortening or butter

Combine flour, baking powder, salt and soda in mixing bowl. With a pastry blender or two knives, cut in shortening until broken into fine particles. Add buttermilk and stir gently with fork until dough holds together. Gather it into a ball, turn on floured board, and work lightly with floured fingers. Roll or press dough out 1/2" thick or so. Cut dough with floured cutter or a knife or a cup. Place biscuits on baking sheet 1" apart. Bake at 425 degrees for 12 to 15 minutes. Makes 16 (2") biscuits. Serve with jam or jelly while warm.
