TOM'S EGGPLANT | |
1 or 2 eggplants 1 egg per eggplant 6-8 slices American cheese or your favorite Dash of thyme Celery salt to taste Several pats butter Crushed soda crackers Slice and peel 1 or 2 eggplants. Boil in salted water until soft. Drain and mash. Separate eggs. Add beaten egg yolks to mashed eggplant and place into sprayed casserole dish. Add small chunks of cheese and celery salt and thyme. Dot the top with pats of butter. Mix well. Fold in beaten egg whites and top with crushed soda crackers. Bake at 370 degrees for 25-30 minutes. |
