4 eggs, slightly beaten
1/2 c. oil
1 c. Bisquick mix
3 c. shredded zucchini
1/2 tsp. salt
1/4 c. chopped onion
2 tbsp. parsley
1/4 c. grated Cheddar cheese

Heat oven to 350°F. Mix ingredients and pour into greased dish.

Bake 25 minutes or until toothpick inserted in center comes out clean. Serve warm.
