“TEXAS CHILI” IS IN:
NEXT RECIPE:  THE BEST BREAD PUDDING

TEXAS CHILI 
2 lb. very lean ground beef or diced chuck steak
7 tbsp. chili powder
1 tbsp. ground cumin
2 tsp. paprika
1 onion, finely chopped
2 tsp. salt
1 1/2 tsp. cayenne pepper
2 tbsp. masa
1 (8 oz.) can tomato sauce
1 (15 oz.) can red beans (optional)
1 (15 oz.) can tomatoes (whole or diced, drained) (optional)

Brown ground beef and drain. Stir in tomato sauce and 2 cans of water. Mix all ingredients except cayenne pepper and masa. Simmer 30 minutes. Add as much pepper as desired. Mix masa and 1/4 cup warm water. Add to chili and stir well. Add tomatoes or beans if desired. Simmer 20 minutes.

Of course, feel free to add more or less pepper. I usually serve it over rice or with tortilla chips, sometimes both. Enjoy ;)

Well, all my tomato sauce and what not were gone - my nephew is a chef lol. Hence, I substituted a 15 oz Progresso Cream Tomato for can of tomatoes (delicious - better I think).

I did add red beans and fresh diced tomatoes. Next time, I would like to add corn and bell pepper, yeah.

I did not use 7 tbsp chili powder (glad that I did not), as 3 tbsp is sufficient heat for me. Fast easy, and better than any can of chili sold at the grocery store.

You bet, took me a SNAP to make.

It seems so simple and it is... but the flavor sand consistency are excellent!
I added a spoonful of tomato paste and left out the whole tomatoes.
I added the kidney beans, too.
Seriously delicious.
Side note: I didn't have masa but used a half T corn meal and a half T flour, then mixed that with the water.

My family loves this recipe, but I tweak it some. I add an extra can of kidney beans and more salt. Also I don't drain the tomatoes.

I made a double batch of this chili for our family Christmas gathering last year. I made it without the beans or masa. Everyone loved it and there were NO leftovers. So easy to make and tasty! I'm making it again today with the masa and the first taste tests are coming back with delicious reviews, again!
