POTATO CHOCOLATE CAKE 
1 c. hot mashed potatoes, unseasoned
2 c. sugar
2/3 c. Crisco
4 eggs, unbeaten
1/2 c. milk
2 c. sifted flour
1 c. chopped nuts
3 tbsp. baking powder
1 tbsp. each cinnamon & nutmeg
1/2 tbsp. salt
1 tbsp. vanilla
3/4 c. Hershey's cocoa

Prepare mashed potatoes. Gradually beat sugar into Crisco until fluffy. Add eggs, one at a time, beating well. Add vanilla and potatoes, and then add sifted ingredients and milk alternately, about 1/4 of each at a time, beating smooth. Add nuts. Bake at 350 degrees for 40 to 50 minutes in 9"x13" pan.
