POTATO CHOCOLATE CAKE 
1 c. hot mashed potatoes (unseasoned)
2 c. sugar
2/3 c. shortening
4 eggs, unbeaten
1/2 c. milk
2 c. sifted flour
1 c. chopped nuts
3 tbsp. baking powder
1 tbsp. cinnamon
1 tbsp. nutmeg
1/2 tsp. salt
1 tbsp. vanilla
3/4 c. cocoa

Prepare mashed potatoes. Gradually beat sugar into shortening until fluffy. Add eggs one at a time, beating well. Add vanilla and potatoes and then add dry ingredients and milk alternately, about 1/4 of each at a time, beating smooth. Add nuts. Bake at 350 degrees for 40-50 minutes.
