LEMON BARS - FOOD PROCESSOR
METHOD
 
Heat oven to 350 degrees. Use processor bowl with regular blade for all steps.

Add:

2 c. flour
1/2 c. powdered sugar
2 sticks cold butter (cut in eighths)

Process only until crumbly (not until dough forms). Pat into jelly roll pan - bake 20 minutes.

Put into processor bowl:

4 eggs
2 c. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 c. lemon juice

Process and pour over baked crust. Bake 20 minutes more.

FROSTING:

In processor bowl add 2 cups powdered sugar and lemon juice to make consistency of heavy cream. Pour frosting over hot bars if you want it to be shiny and transparent.
