OAT BRAN MUFFINS 
2 c. oat bran
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1 c. skim milk
2 egg whites
1/4 c. molasses or honey
2 tbsp. vegetable oil

Mix and bake at 375 degrees for 30 minutes. Variations - add:

1/4 c. raisins
1/4 c. nuts
1/2 c. mashed ripe bananas
1/2 c. frozen blueberries
1/2 c. chopped apples and 1 tsp. cinnamon
