OAT BRAN MUFFINS 
5 c. flour (1 c. white, 1 c. whole wheat and 3 c. oat bran)
1 1/2 c. sugar
5 tsp. baking soda
2 tsp. nutmeg
4 tsp. cinnamon
1 qt. lowfat buttermilk
1 carton egg substitute (equals 4 eggs)
3/4 c. safflower oil
7 1/2 to 8 c. (15 oz. box) oat flakes
1 c. raisins or other fruit
Nuts (optional)

Blend dry ingredients. Add liquid and blend well. Stir in cereal, fruit, nuts. Fill muffin tins 2/3 full. Be sure to grease unless using papers. Bake at 400 degrees for 15 to 20 minutes.

Makes 4 to 5 dozen regular size.
