BLUEBERRY OAT BRAN MUFFINS 
4 egg whites
2 tbsp. safflower oil
1/2 c. honey
3/4 c. skim milk
1 tbsp. baking powder
1 tbsp. baking powder
3/4 c. chopped walnuts
3/4 c. frozen blueberries, thawed or fresh blueberries
2 1/2 c. oat bran

Combine egg whites, oil, honey, milk and baking powder. Mix in oat bran gradually. Fold in walnuts and blueberries. Fill oiled muffin tins 2/3 full. Bake at 425 degrees for 12-15 minutes or until done. Makes 1 dozen.
