MOTHERS OAT BRAN MUFFINS 
2 1/4 c. oat bran
1/4 c. brown sugar
1/4 c. chopped walnuts
1/4 c. raisins
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. skim milk
1 egg + 1 egg white, beaten
1/4 c. honey
2 tbsp. sunflower oil

Preheat oven to 425 degrees. Grease a 12-cup muffin tin with butter. Combine oat bran, brown sugar, walnuts, raisins, baking powder and salt. Add skim milk, eggs, honey and sunflower oil. Mix until ingredients are just moistened. Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
