PEANUT BUTTER OATMEAL COOKIES 
3/4 c. butter flavored Crisco
1 c. peanut butter
1 1/2 c. firmly packed brown sugar
1/2 c. water
1 egg
1 tsp. vanilla
3 c. uncooked oatmeal
1 1/2 c. flour
1/2 tsp. baking soda
Granulated sugar

Beat first three ingredients until creamy. Beat in water, egg and vanilla. Add combined dry ingredients. Mix well. Cover and chill about 2 hours. Heat oven to 350 degrees. Shape dough into 1 inch ball; place on ungreased cookie sheet; flatten with fork dipped in granulated sugar to form a criss cross pattern.

Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute on cookie sheet; remove to wire racks; cool completely. Makes about 7 dozen.
