CHEESE CUPS 
1 (8 oz.) box vanilla wafers
1 lb. softened cream cheese
3 eggs, lightly beaten
1/2 c. sugar
1 tsp. vanilla
1 can cherry, lemon, blueberry or pineapple pie filling
Sm. cupcake liners

Arrange cupcake liners on cookie sheet and put a vanilla wafer in the bottom of each. Preheat oven to 350 degrees.

Combine cream cheese, eggs, sugar and vanilla and beat well. Either blender or electric mixer will do. Fill cupcake liners 3/4 full and bake until firm, about 20 minutes. Cool, then top with pie filling. Makes about 35 cheese cups.
