CHEESE TARTS 
Vanilla wafers
3 (8 oz.) cream cheese, room temperature
1 c. sugar
3 eggs
1 tbsp. vanilla
2 cans pie filling (cherry, blueberry)
Cupcake pan & baking cups

Beat all ingredients (except cookies and pie filling) at high speed about 5 minutes.

Line pans with baking cups. Put a vanilla wafer in each cup and fill 2/3 with cheese mixture, about 1 tablespoon.

Bake at 350 degrees for 20 to 25 minutes.

Cool and top with pie filling.

Makes about 2 1/2 dozen. Refrigerate.
