CHEESE TARTS 
2 (8 oz.) cream cheese
3/4 c. sugar
2 eggs
1 tsp. vanilla
Vanilla wafers
1 can pie filling (cherry, blueberry, strawberry, etc.)

Cream the cream cheese and sugar. Add eggs and vanilla; beat until smooth. Line cupcake pan with foil liners. Put vanilla wafer on bottom. Fill with cream cheese mixture 3/4 full. Bake at 375 degrees for 10 minutes in pre-heated oven. Cool, then add topping. Refrigerate until cold. Use ice cream scoop - makes the job real easy!
