CHEESE TARTS 
2 (8 oz.) pkg. cream cheese
1 box vanilla wafers
2 med. eggs
1 tbsp. lemon juice
3/4 c. sugar
1 tsp. vanilla flavor
1 pkg. of pecan halves or 1 jar red cherries
1 box muffin baking cup, with foil lining

Preheat oven to 350 to 375 degrees. In large mixing bowl, whip cream cheese, eggs and sugar until smooth. Stir in lemon juice and vanilla flavor.

Place approximately 24 muffin baking cups on a cookie sheet or in muffin pans. Place 1 vanilla wafer in each muffin cup. Spoon 2 tablespoons of cream cheese mix on top of cookie (about half full).

Bake for approximately 15 to 20 minutes. Remove from oven and top with cherries or pecan halves. Cool for 15 to 30 minutes before serving.
