1 tbsp. butter
3 c. onion (sweet)
1 tbsp. flour
1 1/4 c. milk
2 eggs
1/2 tbsp. salt
pepper to taste
1/2 lb. sharp cheddar cheese, grated
1 pie shell

Sauté onion in butter until soft. Mix flour with cold milk until there are no lumps. Add eggs, salt, pepper and cheese. Add onion and mix well. Pour into pie shell and bake for 40 minutes until brown, bake at 350°F.
