ONION PIE 
3 to 4 cups of onions
1/4 c. butter, plus 2 tbsp. divided
30 crackers, crumbled
1 lb. shredded cheddar cheese
1 1/2 c. milk, scalded
3 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper

Sauté onion in 2 tablespoons of butter until golden brown. Melt 1/4 cup of butter in a container. The microwave is good for this. Add 30 crumbled crackers. Put the butter and cracker mixture in a 1 1/2 quart casserole dish, covering the bottom of the dish. Next, place the hot sautéed onions on top of the cracker mixture, then place cheese over the onions. Next, scald milk in a saucepan. Add to it 3 beaten eggs, salt and pepper. Pour over cheese and onions.

Bake at 350°F for 30 minutes or until knife comes out clean like custard.

Since microwave ovens vary in power, you may need to adjust your cooking time.
