POTATO SOUP | |
4 c. cubed potatoes 5 stalks celery, including leaves 1 qt. milk 3 1/2 tsp. salt (I use less) 2 med. onions 6 tbsp. butter 7 tbsp. flour 1/4 tsp. pepper Boil first 5 ingredients together with ham bone if available until tender. Make white sauce with remaining ingredients. When potatoes are tender, stir in white sauce over very low heat. Add 2 tablespoons parsley and 1/2 pound crisp bacon and 1 tablespoon drippings. If boiled with ham bone, cut ham off bone and omit bacon. |
