PIMENTO CHEESE POTATOES 
14 oz. can diced pimientos
4 med. diced potatoes
1 med. diced onion
1 tsp. salt
1/2 tsp. pepper
1/2 lb. grated cheese
2 c. milk
2 tbsp. butter
2 tbsp. flour

Place potatoes, onions and pimientos in greased baking dish. Melt butter in saucepan and blend with flour and seasonings. Add milk. Cook until thick. Remove from heat and add cheese. Pour over potatoes. Bake at 350 degrees until potatoes are tender.
