FIG COOKIES
3 pkgs. dried figs, soaked overnight & tips removed
1 box dry mincemeat
2 c. raisins
2 c. almonds
1 c. walnuts
8 oz. mixed candied fruit
1 sm. jar orange marmalade

2 tsp. cinnamon
1 c. honey
1 c. brown sugar

Mix all very well and add 1/4 cup of any liquor - brandy, rum, whiskey. Let this stand overnight to age, can stand longer.

Pastry Formula: For each cup of flour add 3 tablespoons shortening, 1/3 teaspoon salt and enough water to make a dough similar to pie crust.

Roll dough into long THIN strips about 3 inches wide. Roll it wider and cut to width. Can get 2 strips at once. Fill center of strips with fig mix and make into a long roll. Cut into pieces about 4 inches long (or less) and make slits on side. Bake at 400 degrees until lightly browned. Ice while hot and sprinkle with candy sprinkles.

Icing Formula: For each egg white use 1 cup confectioners' sugar and 1 tablespoon lemon juice. This hardens when cool.

NOTE: For the above amount of figs it takes 9 to 12 cups of flour. I mix 3 cups at a time.
