PEANUTBUTTER CUP CAKE | |
1 (10.5 oz bag) Reese's snack size peanut butter cups 1 (18.25 oz box) yellow cake mix 3 eggs 1 (16 oz container) lite sour cream 3 cups milk chocolate chips, melted, slightly cooled Cut 8 peanut butter cups in half, reserve. Coat 2-9" cake pans w/ cooking spray. Preheat oven to 350°F. In a bowl, with mixer on low speed, beat cake mix, 1-1/3 cups water, eggs, and 1/3 cup sour cream until blended. On medium speed, beat 2 minutes. Divide batter between cake pans. Sprinkle reserved candy over top of batter. Bake 25 minutes. Cool 10 minutes. Transfer to racks. In a medium bowl, stir remaining sour cream into chocolate, on medium speed, beat until light and fluffy. Chill 30 minutes. Spread 1 cake layer with 1 cup frosting. Top with 2nd layer, frost top and sides. Cut more peanut butter cups, put on top of cake. The ultimate cake! Submitted by: Sherry Monfils |
