CREAMED SPINACH 
2 lbs. spinach
3 tbsp. butter
2 tbsp. flour
1 c. milk
Salt & pepper
1/4 tsp. dry mustard
Pinch nutmeg

Wash spinach several water, cook 3 minutes until limp. Sprinkle with salt and puree in blender. Make sauce of the butter, flour and milk, seasoning sauce to taste. Stir in spinach.
