BEST SMOTHERED CHICKEN | |
This recipe is fantastic, my husband absolutely loves it. It's always a favorite and relatively easy to prepare and bake. I only make it about once a month however because it is very fattening. 8 chicken thighs, boned and skinned mayonnaise 1 large onion, sliced thinly 6 strips bacon 8 oz. Mozzarella cheese, sliced thinly salt and pepper, to taste olive oil Baste chicken thighs thoroughly with mayonnaise on both sides (make sure that thighs are covered). Put thighs on a plate and Saran wrap. Leave in the refrigerator for at least 30 minutes. Preheat oven to 450°F. Grease small baking pan (at least 1 1/2-inch deep) with olive oil. Re-baste chicken thighs with mayonnaise, season with salt & pepper to taste. Place chicken on bottom of baking pan side by side. Sprinkle a thin layer of onion over chicken. Lay uncooked bacon strips over chicken and onions. Sprinkle another layer of onions over bacon. Lay 1/2 the cheese in a layer over onions, fill in all spaces. Sprinkle rest of onions over cheese; make sure to thoroughly cover the cheese. Layer the rest of the cheese over the onions, cutting more cheese and filling in the gaps if necessary. Put aluminum foil on the oven rack the baking pan will be sitting on (the food will bubble over the pan). Aluminum foil the top of the pan. Bake at 450°F for 40 minutes. Check after 20 minutes, if pan is bubbling over too much you can remove it and tip some of the juice out if you would like, then replacing in the oven. ENJOY! Submitted by: M. Wahl |
