FENNELL'S SMOTHERED CHICKEN 
Chicken breasts (bone in or out is fine)
Honey Mustard
Italian Dressing
Bacon
Red onion
Monterey and Colby Jack cheese

All ingredients are measured by personal preference for amount desired to cook.

Marinate chicken in Italian dressing for a couple hours. When ready, get grill prepared however you do. We like to use wood chips on a charcoal grill for extra flavor.

Cook bacon to slightly done and set aside. Sauté onions in bacon grease, we sometimes add mushrooms or peppers to the onions also. You can do any addition you like and it's still great!

Preheat oven to 350°F. Once chicken is ready to come off the grill (do it over cook it) place it in casserole dish and put slits down center of breasts. Fill slits with sautéed veggies then top with bacon.

Cover with honey mustard and then cheese and bake until melted and bubbly.
