SMOTHERED CHICKEN BREASTS 
4 chicken breasts (I use boneless)
1/2 cup (1 stick) unsalted butter, divided
1 (8 oz.) pkg. button mushrooms
1 (8 oz.) pkg. shredded Mozzarella cheese
salt and pepper, to taste

Clean and slice mushrooms. Melt 1/2 stick of butter in large skillet. Season both sides of thawed chicken breasts liberally with salt and pepper. Add sliced mushrooms to skillet, sauté them for 3 minutes, then slide the chicken breasts in the skillet under the mushrooms.

Add the other half of the stick of butter. Brown chicken for about 6 or 7 minutes on each side. Then sprinkle Mozzarella cheese all over the top, cover with lid or foil and let cheese melt.

Serve HOT!!
