SAI SOO GAI 
1/2 lb. white chicken, cooked, cubed, and shredded
1 sm. lettuce, shredded
2 oz. sui foo (bean thread), deep fried until light brown or white
4 green onions, shredded
2 tbsp. sesame seeds
2 tbsp. chopped almonds or peanuts

CHINESE DRESSING:

2 tbsp. sugar
1 tsp. salt
1/2 tsp. pepper
1 tsp. ajanoto
3 tbsp. vinegar
1/4 c. salad oil

Combine all ingredients and mix just before serving. Garnish with parsley and Chinese salad dressing. Put all ingredients to salad dressing in a jar and shake.
