1/2 c. salad oil
1/4 c. lemon juice
1 tbsp. sliced green onion
1 tsp. sugar
1/2 tsp. dried mint OR 1 tbsp. fresh mint, chopped
10 oz. fresh spinach, torn
2 med. apples, thinly sliced
1 sm. cucumber, thinly sliced
1/3 c. sliced radishes

In a screw top jar combine oil, lemon juice, onion, sugar, mint, 1/2 tsp. salt and dash pepper. Cover, shake well. Chill.

In large bowl combine spinach, sliced apple, cucumber and radishes. Shake dressing; pour over salad. Toss to coat. Makes 8 to 10 servings.
